Healthy Oatmeal cinnamon apple raisin cookies

1/4 cup butter
3 teaspoons Stevia or Splenda
2 eggs
3/4 cup applesauce
3 tablespoons vanilla extract
1 cup all purpose flour
1/2 cup unsweetened apple jucie
1 teaspoon baking soda
1 teaspoon cinnamon
2 cups rolled oats
1/2 cup chopped raisins
1/2 cup chopped walnuts (Optional 1 tablespoon honey and 1 tablespoon molasses)
Preheat oven to 350 degrees. Spray cookie sheet with Pam. In a large bowl cream butter, Stevia, and eggs until smooth. Add apple juice, apple sauce, flour, baking soda and cinnamon. Stir in raisins and walnuts. Bake 17- 20 minutes until golden brown. Cool before removing. Enjoy! rockhound

Yeah, also tastes great with peanut butter smeared on them, or between two of them, as a sandwich. rockhound
