I just clean them carefully enough to make sure that they are a common date, with q-tip and water and sometimes a little white vinegar. Common dates, I will soak for a little while.
I have only found one that was semi-key out of hundreds that I have found. I will also be careful with the ones that are in good condition. I found a 1920s one two weeks ago with hardly any wear (grade around EF), but luckily it cleaned up with very little work and I just removed the dirt. Most of the wheats I find are heavily crusted and/or corroded.
