Hows the fishing been treating you.

I live in Pa. and when it comes to smoking meat we take it pretty serious. Nothing beats a smoke house built out of slab wood and seasoned with apple wood smoke. We smoke everything from venison and fish to ribs and pickled eggs. This kind of smoke house is hard to top in my opinion. Just build yourself and outhouse looking building with a cement block foundation and a fire pit in it with meat racks an such to your needs. Also if you are looking to smoke meat when the weather is a little warmer you can also pipe the smoke in from an outside wood burner. These are just a few suggestions hope they help.
