Nice cooler full of fish, tomclark. Makes me hungry. My Mama and myself used to buy a mess of mullet fish from the seafood place and fry them up with some french fries, hoecake cornbread, cole slaw and cheese and garlic grits and cook for our entire family. Neither one of us can hold out to cook a large meal anymore, but it sure was fun when we could get together and have food and fellowship with our extended family. I can't remember the name of the trout one of my customers gave me when I worked in PCB, Fl, but they were delicious. They were salt water fish and ever time he took his cast net out and brought in some mullet, he would give me one or two. The first time somebody gave me smoked mullet, I gave it to my neighbor's cat. One day I was hungry and a customer gave me some at the service station where I worked and it was the best tasting stuff I ever ate. I just had to get past the smell. Beef jerky is the same way. You open a jar and it stinks to me, but it sure tastes good. I like to grill fish as much as I like to fry them. One of the cooks on an oil rig I worked on barbecued this large fish somebody caught and it was great. I think he called it a ling or lemon fish. The name of the trout was speckled trout and they were good eating.
