Sorta resembles jade but I know nothing about rocks and minerals.

Just plain quartz man I've found it blue and pink and purple

No it's not like quartz and quartz s harder and doesn't breake like that

I don't know what it is, but I know it is not jade. Jade doesn't just break off - 2 hours on a wet diamond saw barely cut a small piece.

In NY I have heard that called "karst". It is the matrix that quartz (and gypsum) forms in. I believe it is dolomite and other rocks - the kind that caves form in because water allows carbolic acid to form and to remove portions of it (hence the odd cavities in your sample). Sedimentary carbonate rock.
