Pumpkin Pancakes - Fantastic & quick
Pumpkin Pancakes
2 1/2 Cups Aunt Jemima Original Pancake Mix
3 TBS brown sugar
2 1/2 tsp fresh pumpkin pie spice
1 tsp vanilla extract
1 egg
1 3/4 cup whole milk
2 TBS vegetable oil
2 TBS cider vinegar
1 cup pumpkin puree
Mix ingredients together, lightly oil the pan & use medium heat
Use between 1/4 and 1/3 cup per pancake, brown on both sides and serve hot with butter & maple syrup
I like to use a little extra cinnamon on top!!!!
