Ingredients:
5 medium potatoes
2 large eggs
1/8 cup flour
1 tsp. salt
Grate potatoes with fine to medium grater. If all you have is a hash brown grater, grate very lightly so you do NOT have strands of potatoes. You want finely grated fresh potatoes.
Combine all the ingredients. Stir until consistent. Batter should have a little standing water after stirring. If not, add a little water - you'll have crispier edges!
In a large skillet, heat up several tablespoons of vegetable oil.
Drop 2-3 heaping table spoons of batter per pancake into hot oil, and tamp down to about 1/4 inch thickness. Fry both sides until edges are crispy and golden brown.
Serve with apple sauce.
