Slice backstraps real thin they should be about 4" X 2" rectangles or larger.
Lay those flat spread them with cream cheese ( I will even add chives mixed in) place a seeded deveined (unless you like hot hot hot) whole or halved Jalapeno onto the strip roll then wrap with bacon secure with toothpick and bake uncovered. in a 350 degree oven for about 1/2 hour 45 mintues or until bacon is crisp.
these are really great I use texas Petes Honey Mustard for a dipping or a nice BBQ sauce.
