Five hours and still holding my own! :laughing9:
Did about 4 dozen or so, all of them opened, and got eaten.
Problem is, can't make up my mind which I like better, the garlic and butter, or the horse radish sauce. :dontknow: Guess I'll just have to keep eating both. :laughing9:

Another good dip is put some catsup on a saucer or in a small bowl, amount will depend on number of oysters, then mix up some dry, hot mustard in a little water until it has the consistency of the catsup. Add the mustard to the catsup by just putting it on top of the catsup. Only use about 1/5 of the mustard to catsup or adjust to your own tastes. Dip the oyster in that. Get catsup on it and pick up a small portion of the mustard at the same time. Good Stuff!!

What kind of wood is best?

Down in FL we used to buy oysters fresh from the market in burlap sacks. Stop at the beer cave and load up on the frosty's. Go home and start a fire ,we used oak. Once there was a good bed of coals we would lay them out on the grill top. Once the oysters popped open they were ready to eat. So we didn't smoke them in a smoker, just an open pit wood grill. Little hot sauce, a shot of lemon on a saltine cracker and a cold brew, mmmm mmmm good.
Wish I had a bushel right now, only problem is they are hard to come by in KY.

let me tell you about the size of some oyster shells we find when we dig some shell middens down here. we have found then 8-12 inches long and thats the truth. The oyster shells were always the base or bottom of the mound/middens. We are talking some sites date to 3,000 years ago. These oysters were 4-6 inches long inside. I could only imagine how they taste

Those were the days, I miss my digging spot.
I have also dug some big shells like the ones you speak of, I'll bet they cooked them over a fire and they tasted great. If only they had cold beer to chase them with. ;D

I have found shells up to about 15-16 inches here in WV!!! But these were Fresh water muscles. I think they are protected.. With all this mining and water pollution here, I am suprised we even still have fish.. ???
