2 cans Blue or lump crab meat
1 cups Crushed Saltine Crackers or Seasoned Bread Crumbs (or Croutons)
1 Large egg
1/2 Cup Bermuda Onion, finely chopped
1/2 Cup White Mushrooms, Finely chopped
1/2 Cup Fresh Celery, finely chopped
4 Cloves Garlic, finely chopped
¼ cup Mayonnaise
1 tsp Worcestershire sauce
2 tsp Mustard
½ tsp Salt
¼ tsp Black Pepper
In a frying pan, caramelize the onions in olive oil, then add chopped mushrooms, celery and garlic, and cook for another 10 minutes
In a large bowl mix crackers, eggs, mayo, mustard and seasonings. Drain and add the crab meat and blend thoroughly.
Add the caramelized onions, mushrooms, celery and garlic into the crab mixture and blend thoroughly.
Using an ice cream scoop, place a ball of the mix into the palm of your hand and shape into 8 to 10 cakes.
Cook cakes in frying pan with a tablespoon of olive oil 5 minutes per side until browned.
We use the same recipe and substitute bay shrimp or Salmon for a variety of taste.
