Another False- I was told this story years ago by a person, he thought it was true, 100+ years ago when dry animal dung was shipped as cargo for fertilizer in wooden hull ships, it had to be shipped high on the top deck cargo, away from leaks and ocean spray because of the unpleasantry of getting wet, leaky and odorous. The crates were marked Ship High In Transit and later abbrev. to the first letter of each word, hence how the word came into existence.

I’ve actually parroted that line as true….as usual, I’m wrong
 

A possible of the Brass Monkey saying, tourist shops in East Asian countries sold single brass monkeys in gift shops, tourists bought a lot of them. Also still see the "hear no evil, see no evil, speak no evil" monkeys in some shops in the states although usually not brass.
