Fresh Fish fritters

Hi Everyone

I have been making these for a while now and decided i had nothing better to do tonight than to share my recipe to you all. These fritters are an easy and quick way to make a delicious feed for you family and guests in about 10 minutes prep time and about 20 mins cook time.

.5Kg or 1 pound fresh fish... I use snapper(salt water fish) but would assume that you could use any fish to be honest Cut fish into the smallest size you can cut.
1 cup course grated cheese. ( i use mild but again use what suits you)
1 grated zest of one lemon
1 seedless juice of the same lemon.
2 finelly cut spring onion all the way to the tips.
2-3 large Coursly grated potatoes( remove excess water in a lettuce spinner if possible. Dont muck around as they will turn brown pretty quick)
Salt and Pepper to taste.
1 cup bread crumbs.
2 eggs(large)
2 tbls oil for cooking. (in pan)

Stuff all this into a bowl and mix with your hands for 3 minutes, making sure everything is mixed preoperly. in your hand grab a slightly larger than golfball size of mixture and roll together and compress. when applying to pan squash the ball done to about a 3/4 inch hight.
Heat frypan or skillet on a low to moderate heat and cook forabout 6-7 minutes each side.

Damn delicious. here is a pic of them cooking.
