Good timing

I work at a little mom and pop pizza place. I have a cash drawer about 50-60 % of a 35 hour work week. I usually just look for silver dimes and quarters. Should I start saving the pennies pre 1981 pennies for the copper value? Anyways, this lady comes in and picks up her food and mixed in with the change, she gave me a 2001 North Carolina S quarter Proof! This thing is the most beautiful coin I've ever owned. I cant stop looking at it. I've seen it retail from $7.95 to $600 USD. I'm not familiar on grading. Any help would truly be, well helpful and really appreciated.
