Here's something I tried after having some at my Mom's in Williamsport, PA:

Servings: 5
Preparation Time: 30 minutes
Start to finish: 1 hour

Notes: This makes an excellent breakfast dish when warmed and served with milk or cream.

5 Medium Peach, Peeled and pitted
1 Pie Pastry, See recipe
5 Tablespoons Splenda
5 Tablespoons Splends Brown Sugar
5 Pats Butter

1. When preparing pie pastry, seperate into 5 pieces; roll each piece into a square of approx. 5 inches.

2. Place a peach in center of square, sprinkle with Splenda, Splenda Brown Sugar, and top with pat of butter.

3. Moisten edges of pastry and bring 4 corners of pastry up and over peaches and pinch edges together to seal. Sugar or raw sugar can be sprinkled on tops of slightly moistened dumplings.

4. Place dumplings on large cookie sheet and place in 450 degree oven for 12 minutes or until slightly browned.

5. Reduce heat to 325 degrees and bake for an additional 25 minutes.
