From what I understand conch is fairly protected these days due to overharvesting. During my honeymoon circa 1984 we were at Freeport in the Bahamas and had my first taste of conch salad on the warf.
The fisherman made if fresh right in front of me chopped up conch, lime juice some, salt, pepper and jalapeno pepper. Good stuff.
A couple of years later I actually bought a live conch in the shell in Montreal at a fish market, rather than having it prepped for me there I brought it home as is....I struggled with it for about an hour on a chopping block, using a knife, hammer and whatnot....what a comedy of errors....
