I did try that somewhere I liked it! It's very lean like bison.

I haven't Yet

I have had Buffalo Burgers.

a Friend had Ostriches, But if I remember right, He had them to try & Sell Eggs.
Don't think it worked out well, It didn't last Long. he also had a sort of zoo in his back yard.
possible a pa winter ended it. or the neighbors.
