I did a twist on my Vidalia Onion Pie by reducing the onions and addind fresh asparagus.
Servings: 6
Preparation Time: 30 minutes
Start to finish: 1 hour 10 minutes
Notes: Preheat oven to 450 degrees.
Great when fresh Vidalias are in season.

1 Bunch Asparagus, Fresh
1 Large Vidalia onion, Thinly sliced
1 Teaspoon Garlic, Minced
1 Stick Butter
3 Egg, Beaten
1 Cup Sour cream
1/4 Teaspoon Salt
1/4 Teaspoon Pepper
Dash Tobasco
1 Pie crust, Unbaked
Parmesan cheese, Grated
1. Preheat oven to 450 degrees.
2. Clean asparagus and cut into 1-inch pieces
3. Saute garlic, asparagus, and onions in butter.
4. Combine eggs and sour cream; add to onion mixture.
5. Season and pour into pie shell; sprinjkle with cheese.
6. Bake at 450 degrees for 20 minutes then lower to 325 degrees for 20 more minutes.
