Did ya bake yourself an apple pie? I am having ..... I haven't decided I want some... ????? :dontknow: :icon_scratch:

Nah, it was store-bought.
If I was gonna make a pie from scratch, I'd make either a cherry pie or a chocolate merangue.

Re: What's For Dinner?

baspinall - looks like mighty good Mexican food for a Pa. guy. If you lived
closer, I'd gladly bring a case of Dos Equis for just a plate of those.
Showed the wife & now she wants me to make them. Oh well.

Re: What's For Dinner?

Oh, just B.L.T. pizza tonight. Very good though. And I will have some to take for lunch tomorrow.
I put extra miracle whip or mayo on it and it is really good.

Re: What's For Dinner?

I hope this doesn't sound dumb, but what are "Porcupine meatballs" and how are they made?

Tonight we are having burritos, with salsa, cheese and something on the side, haven't figured it out yet. :dontknow:

Tomorrow morning my wife Son and Daughter are going to Kings Island to stay for the weekend, (Mother in-law, Sister in-law, nieces and nephew are going as well.)

I plan on cooking a BUNCH of egg, bacon and cheese sandwiches so they don't have to stop on the way.

I planned on going but I took a nasty fall down our basement steps, needless to say I broke my fall by catching myself with my face. My whole body is sore, so I've decided to stay home. :(

My wife will be sending me pictures of everybody having fun, so with the digital technology it will almost be like I'm their with them.

Have a great evening folks.

WindHarvester,
Porcupine Meatballs:
1 beaten egg
1 10 oz. can condensed tomato soup
1/4 cup long grain rice
2 tablespoons finely chopped onion
1 tablespoon snipped parsley
1 pound ground beef
1 teaspoon Worcestershire sauce

In a bowl combine egg and 1/4 cup of the soup
stir in uncooked rice, onion, parsley, 1/2 teaspoon salt, and 1/8 teaspoon pepper.
add beef and mix well. shape mixture into 20 small balls, place in a 10" skillet.
mix remaining soup with Worcestershire and 1/2 cup water, pour over meatballs.
bring to boiling, reduce heat. cover and simmer 35-40 minutes, stir often.
makes 4-5 servings
