Birch Water

Each spring before it gets to warm for about 2 weeks we tap Birch trees for Birch water. After it gets to warm the water turns into sap.
Water has a slight sweet taste and feels slightly thicker than water.

you just drinking it or do you boil it down into birch syrup?
 

I think that is a neat project. I’m going to be on lookout for some birch syrup, never noticed that flavor.

Just drinking it, it is just in the spring so for us it's a bit of a treat...

I make maple syrup, so I drink the sap sometimes while I am boiling. No birch on my land, so never been able to try birch
