Garlic Spaghetti Squash

For some reason I had a yearning for some spaghetti squash today. Rather than the usual adding of Italian Sauce to "pretend" you're eating spaghetti, I tried to think what I could do to make a tasty, different dish. Here's what I came up with and it was actually quite tasty! :P

Servings: 4
Yield: 4 Cups
Preparation Time: 50 minutes
Start to finish: 1 hour 30 minutes

Serving Ideas: Makes an excellent side dish that serves 4 or a main dish that serves 2.

1 Medium Squash, spaghetti, Cooked and shredded
1/2 Large Bermuda onion, Sliced and seperated
3 Slices Roasted red pepper, diced
2 Cloves Garlic, Minced
2 Tablespoons Olive oil
1/2 cup Asiago Cheese, Shredded

1. Preheat oven to 350 degrees.

2. Cut Spaghetti Squash in half, remove seeds, place face down on cookie shett and bake for 45 minutes.

3. Remove squash and let cool. Using a fork, seperate the strands of the squash and place in bowl and set aside.

4. In a large skillet, heat olive oil, add onions and carmelize. Add garlic and roasted peppers and brown slightly.

5. Turn down heat and add Spaghetti Squash, season to taste, and toss mixture until squash is heated.

6. Just before removing, add Parmesean Cheese, toss lightly, and serve.
