Jungle stuffed french toast 'for kids'

6 slices bread
6 tbsp cream cheese
2 med. bananas (or other fruit or jam)
1 tbsp cinnamon
2 large eggs
1 tsp good vanilla
1/4 cup skim milk
cooking spray

Preheat oven to 400 and spray 8x13 baking dish lightly.
spread 3 slices bread with cream cheese and top with banana slices or fruit spread. Top with bread and slice each sandwhich into 3 equal sections. Set aside. In a bowl combine eggs, cinnamon, milk and vanilla. Dip each section in and place in baking dish. Pour any remaining egg mixture over bread. Bake for 20 minutes.
Top with powdered sugar, syrup and butter for a tasty and nutritious treat! If you let your kids help they will usually eat what they make. This is always the case when I get mine in the kitchen.
This can also be converted to a light recipe by using fat free cream cheese and egg whites or beaters. You could use a sugar free fruit spread in place of the bananas and a low cal or sugar free syrup with I can't believe it's not butter spray.
