No Bake Cookies

2 cups sugar 1/2 cup unsweetened cocoa powder
1/2 cup milk 1/2 cup flaked coconut
1/2 cup butter 1-1/2 teaspoon vanilla extract
3 cups rolled oats 2 tbsp.peanut butter (optional)
In a sauce pan combine sugar,milk,cocoa and butter. Bring to a boil, stirring for
5 minutes. Remove from heat. Add vanilla,oats,and coconut. Mix all
ingredients. Spoon onto waxed paper( or lightly buttered aluminum foil) making haystacks.
Let cool 1 hour. Keep in fridge, if you have any left.

LOVED those as a kid. We called 'em boiled cookies, but same thing. And yes, there were occasions when there was no batter left to make cookies out of.
