Folks,

Well tomorrow night we'll be making some spanokopita for supper. It's basically a Greek Spinach pie there's probably as many versions as there are cooks....lol.

We just use feta cheese without the goat cheese and add some sauteed onions and garlic to the filling for added flavor and we cut the portions after cooking and not before. Since we grow swiss chard we use that instead of spinach.

Hopefully the filo dough is available in the freezer section of your supermarket.
