We use to do that when we lived in WA. We made our own brine too. You can be very creative with the brine. My fave was a sugar, garlic & thai chili sauce brine. Ahh, that looks sooo good!
 

We keep our brine VERY simple. 1 gallon water, 1 cup white sugar, 1 cup brown sugar, 1 cup non-iodized salt, garlic and pepper. Then, about half way through the smoking process we baste the fish with pure maple syrup and apply more fresh ground black pepper. We do that a couple times before they are done. There are some folks that we know that don't like smoked fish but like ours.
 

Looks real good Packerbacker, but you better watch it. You'll have some old Hobo paint a "good for a meal here symbol" on your door some night. Boy you sure know how to cook it up!
 

That's looks great,even at 7:30 a.m.! We smoked some salmon years back And it was really good and I'm not much on salmon.
