Ive been huntin my yard and I noticed my safari get kinda jumpy with signals. Do I try to adjusted my sensitivity.

First thing to do is slow down. Swinging too fast makes them seem unstable.
Then, if it's still "jumpy", and you've properly noise cancelled, turn your sensitivity down one at a time until it improves.
If the instability is ramdom and is still present with the sensitivity turned back, suspect EMI as the culpret.
