I'm considering shallow salt water, (6" depth) & wet sand hunting. Are there PI's that will accept 1/4" or 3.5mm headphone plugs?

Nope... only the Garrett's accept there own designed 2 pin plug...all of the others are hardwired...
 
You can use a Whites TDI. It is however a non waterproof unit.
