Pumpkin Roll

Pumpking Roll:
3 eggs
2/3 cup canned pumpkin
1 tsp salt
1 tsp baking soda
1/2 tsp cinnamon
3/4 cup flour
1 cup sugar

Filling:
8 oz. cream cheese - softened
2 Tbs. butter - softened
1 cup powdered sugar
1 Tbs. vanilla

Combine and beat all pumpkin roll ingredients. Grease a 1 inch deep cookie sheet and cover with wax paper. Spread pumpkin roll dough in pan. Bake at 375 degrees for 15 minutes. Turn out onto a kitchen towel sprinkled with some powdered sugar. Remove wax paper. Roll like a jelly roll in the towel. Cool in refridgerator for 1 hour. Unroll and spread with filling that has been beaten together. Reroll and refrigerate until time to serve.
