The best "hot sauce" for Jambalya (just my opinion) is Crystal brand "Louisiana Hot Sauce" along with a bit of either Tony Cacheres Creole Seasoning or Uncle Leons Louisiana Seasoning.

Of course, being half coonassm what would I know? I might even put in a bit of Zatarains's Liquid Crab Boil.
