what detector is recommended for easement hunting

What kind of easements? Property owners may not like you detecting on their easement since they still have to take care of it.

for the Project.
But I Would choose a Small coil
Being some easments ; if not all
easments, should have alot of Signals.
Especially if there was once Parking meters there.
or parades in the area.

One with a homeowner repellent on it. 
There are basically two types of roads, those owned in 'fee simple' by the guy that lives there and which the public has a right to travel on the road, and those in which the public has fee simple title to. It is not always apparent which is which, even by looking on the deeds.
The first case you have no right to hunt without permission, only to travel on.
The second does belong to the city but the homeowner has to maintain it - mowing, etc. So he would not, in my experience anyway, appreciate you digging that up. I'd say you're asking for more trouble than it's worth.
On the other hand, if you asked permission, he may be more inclined to say yes than in back of the sidewalk.
