If you like Reuben Sandwhiches, you'll like this dip. I don't LoL I just make the dip for everyone else to enjoy but I don't eat it. I don't like my sauerkraut unless it's cooked for hours.
1 (8ounce) Package of Cream Cream Cheese
1/4 cup Thousand Island Dressing
1/4 pound Corned Beef, diced (1 small can should work if you don't wanna weigh it)
4 ounce can of Sauerkraut
1 1/2 cups Swiss Cheese, shredded
1 Loaf of Rye or Italian bread for dipping (or any bread of your choice)
Combine cream cheese, thousand island dressing, corned beef and one cup of the shredded swiss cheese and mix well. Spread the mixture into a microwave safe casserole dish. Top with sauerkraut and then the remaining cheese. Microwave for 4 minutes or until bubbly. Serve with crackers, bagel chips, tortilla chips etc. whatever crunchy dipper you prefer.
** You can also use a round type of bread and hollow out the center. Cut or tear the part taken out into cubes and fill the bowl like you would with the casserole dish and follow the same procedure. Taste like an authentic Reuben Sandwhich.... or so people tell me
